2 cups whole wheat flour
1 cup cornmeal
1 tablespoon baking powder
1 teaspoon cinnamon
1 teaspoon orange zest
¼ teaspoon sea salt
¼ ground cloves
2 cups apple sauce
½ cup maple syrup or agave nectar
½ cup soy milk
¼-½ cup canola oil
2 teaspoons vanilla extract
½ cranberries, currants or raisins
2 apples grated or finely chopped
½ cups chopped walnuts
1 tablespoon flax seeds

Preheat oven to 375°F and lightly oil muffin tins with canola oil or line with paper muffin cups.
Put flour, cornmeal, baking powder, salt, cinnamon, cloves and zest in large mixing bowl. Stir and set aside.
In another bowl combine applesauce, syrup, milk, oil, and vanilla extract and mix until smooth. Add cranberries and mix on high to break apart the cranberries (note: this whole process with the liquid ingredients can be done in a blender instead of with a mixer and mixing bowl if preferred).
Core and cut apples into tiny pieces or grate. Add wet ingredients to dry mixture and fold in apples, walnuts and flaxseed. Do not over-mix.
Fill muffin cups to top with batter. Bake 20–25 minutes or until golden brown and toothpick inserted comes out clean. "Guten Appetit!"

August Menu Great For A Weekend In The Mountains
Our August menu is full of easy to make, tasty summer recipes like Pork Tenderloin With Pineapple Chutney, Lemon Tempeh With Mint Sauce, and one of our personal favorites, Honey-Soy Salmon With Wasabi.

These recipes are all quick and easy to make, and are just begging to be taken on a road trip. Whether you’re going car camping or heading up to the mountains for a weekend retreat from the heat – the question "what’s for dinner" will never come up.

Why Didn’t We Think Of That?
Amy, a new customer, suggested we show last month’s menu in addition to the current and next month on our website. That way people can see what they missed (in case they forgot to order during June) and they can also take a look at what we are likely to have in our freezer at our kitchen.

Do you have a tip for us? Something you’d like to see, or something we could do better? Send it to us via email (or use the contact form on our website). Please don’t forget to tell us your name.

Last Words
If there’s something you don’t like about our food, or something you think we can do better, please tell us. We want to know because we can only fix it if we know it’s broken.

If you like our service, please tell your friends and neighbors (forward this newsletter).

Thank you,
Beckie & Toby Hemmerling.
