In The Spotlight: Laudisio's Boulder Polenta
Our new August menu is full of tasty summer dishes – some are old favorites and some are new additions.

Our Chef of the Month for August is Laudisio and they contributed the recipe for their famous Boulder Polenta. Have you tried it? You owe it to yourself to check out their wonderful Italian food at the restaurant in the 29th Street Mall or at their stand at the Boulder Farmers Market. Antonio Laudisio’s grandfather cooked on the ocean liners coming from Italy in the early 1900’s. He moved his family to New York and opened the first family bakery in Brooklyn. Out of this, the family pizzeria/restaurant tradition emerged, first in Florida and then in Colorado. The first Laudisio opened on the corner of 28th and Iris twenty years ago and then moved to the 29th Street Shopping District in 2006. When you see Antonio (at the restaurant or the Farmers Market) you know he stays true to his motto: "Cibo Vino Amici: Food, Wine, Friends. What else is there?".

The August menu also features the ever popular Red Lentils with Coconut, a wonderful Grilled Salmon with Chili-Corn Salsa, Mango Green Chilis, Black Pepper Chicken with Somen Noodles and Dipping Sauce, and Pork Tenderloin with Tszatziki Sauce and Tabouli.

In The Spotlight: PayPal™
If you've ever ordered from us, you know we use PayPal™ as our payment processor. We have chosen PayPal™ because they have a very strong track record of protecting the security and privacy of their users during each transaction.

However, based on popular requests, we wanted to make you aware that you can easily pay via credit card, even if you have a PayPal™ account.

Here's what you do during checkout: instead of signing in to your PayPal™ account with the orange "Log In" button on the right, click on the "continue" link at the bottom of the screen by the credit card logos (it looks like it’s just for people without a PayPal™ account, but it’s not).

Recipe idea: Avocado-Tomato Pasta
This is an easy summer recipe that can be made in less than 20 minutes.

Makes 3–4 servings:
1 package of your pasta of choice (fettuccine are nice)
1 large, ripe avocado
½ cup minced mild red onions
1 cup diced fresh tomatoes
1 cup chopped fresh basil
Parmesan cheese
salt & pepper to taste


Bring a pot of water to a boil and add frozen pasta. Reduce heat and simmer for about 8 minutes or until al dente. Meanwhile …
Peel and mash the avocado and combine with the onions, tomatoes, and basil in a large bowl.
Drain the pasta and combine with avocado puree. The heat of the pasta will turn the avocado puree into a wonderfully creamy sauce. Top with Parmesan and add salt and pepper to taste. "Guten Appetit!"

Why Didn’t We Think Of That?
Laura pointed out that our ordering process for side dishes is not so smooth. Once your on the "sides" page you can’t see your meals anymore, and it’s hard to remember which meals already come with what side dishes.

Phew, Laura, you’re right – it ain’t so slick, is it? We (Toby) will be working on updating our whole ordering system over the next 6-8 weeks, so hopefully we’ll report some positive developments soon.
