In The Spotlight: A Healthy New Year
Despite our best intentions many of us don’t manage to eat as healthy as we would like to (or normally do) over the holidays. The beginning of the new year is a perfect time to get (back) on track. Our brand new January menu features lots of delicious, healthy, and easy to make options.

From The Kitchen
We still have the following meals from last month’s menu in our freezer: Tofu Coconut Curry, Cincinnati Tofu Chili, Vaquero Beef Stew, Blackberry Mustard Glazed Ham, Chicken Soup With Rice, Beef Daube Provencal, Cannellini Beans Daube Provencal, Asian Orange Chicken, Moroccan Chickpea Chili, and Moroccan Chickpea Chili With Chicken.

While these meals are no longer available online, you can pick them up by dropping by our kitchen at 2690 28th Street or order them over the phone (303–440–3828). Get ’em before they’re gone!


Recipe Idea: White Bean & Tuna Salad
While this salad is great in the summer when the produce is available locally at the Boulder Farmers’ Market, it’s also a wonderful way to take a winter break from the heavy holiday fare.

Makes about 4 servings:
4 oz. spinach leaves
12 oz. cannellini beans (drained and rinsed)
12 oz. canned tuna in oil (drained)
1 cucumber, chopped
2 tomatoes, chopped
2 tablespoons chopped flat-leaf parsley
2 tablespoons olive oil
2 tablespoons lemon juice
cracked black pepper
small pinch of sea salt


Mix/toss the spinach, beans, tuna, cucumber, tomato and parsley in a large bowl, and then divide between 4 plates.

Combine the oil, lemon juice, salt and pepper and pour over the salad. "Guten Appetit!"

Did You Know?
We are happy to accommodate a wide variety of dietary restrictions and food allergies. Almost everything on our menu can be made gluten free and/or vegan. We can also make your meals extra low sodium, skip specific ingredients, and substitute different grains.

Does the Red Wine Sausage Penne on the January menu sound great, but you don’t eat pork? Just let us know and we’ll use chicken or turkey sausage instead.
