July Is Farmers’ Market Month
More and more fresh produce comes into season, and we are developing more and more relationships with local growers. As a result we’ve decided to feature ingredients from as many local farmers in as many of our recipes as possible during the month of July. In addition to our standard produce from "Red Wagon Farm" you’ll see fresh pasta from "Pasta Bozza", peanut butter from "Justin’s Nut butters", lentils from "Altan Alma", and more.
Samples from the menu include Peach Tomato Tofu Steaks, Flank steak With Horseradish Raita, Grilled Salmon With Chili-Corn Salsa, and Jerk Chicken With Mango Salsa. Take a look at the full July menu.
Recipe Idea: Oatmeal Raisin Cookies
This recipe comes from our friend Natalie Murphy. She is the owner of "begin Integrative Nutrition Consulting", and she does the nutritional analyses for all of our recipes. She is a Registered Dietitian (RD) who provides one-on-one nutrition counseling to clients at her office at 954 North Street in Boulder. Using a mindful approach, she facilitates intuitive eating skills with the latest in nutrition research educating clients how to use small daily success to attain optimal health. Makes about 24 cookies
1½ cups rolled oats
1 cup whole wheat flour
¼ teaspoon sea salt
½ cup maple syrup or agave nectar
¼-½ cup canola oil
1 teaspoon vanilla extract
2 tablespoon sunflower seeds
1 tablespoon flax seeds
1 tablespoon sesame seeds
¼-½ cup raisins or cranberries
Preheat oven to 375°F and lightly spray or wipe two baking sheets with canola oil or line with parchment paper.
Combine oats, flour, seeds, and salt together in a bowl and set aside. In a separate bowl mix together the maple syrup (or agave nectar), oil and vanilla extract. Add wet ingredients to dry mixture, mix well and then stir in the raisins. With moist hands form dough into 1½" cookies onto baking sheets. Bake for about 13 minutes or until golden on edges. "Guten Appetit!"
