Food Fact: Two Stand-Out Oils
Olive oil has been found to have beneficial effects on blood lipids and it may even lower blood pressure. According to the World Health Organization, nearly 60 percent of strokes and 50 percent of heart disease are associated with high blood pressure.
Sesame oil is enjoyed for its delicious nutty flavor and also possesses some considerable therapeutic properties. Chinese medicine lists sesame as a blood builder, a kidney and liver tonic, and a bowel protector and regulator. It is rich in phytic acid, the antioxidant that may prevent cancer.

Recipe Idea: Orange-Hazelnut Chocolate-Chip Cookies
If you’ve spent any time talking with us, you may know we try not to eat any sugar (it’s almost impossible to eliminate it completely). But, we still have a sweet tooth and over the next few months we’ll share some of our favorite sugar-free deserts.
Makes about 12 cookies:
1¼ cup whole wheat pastry flour
½ teaspoon baking powder
Pinch sea salt
1 cup Hazelnuts
½ cup dairy-free grain-sweetened chocolate chips
1 orange, zested
½ - ¾ cup soy milk
1 teaspoon pure vanilla extract
½ cup brown rice syrup
¼ - ½ cup avocado or light olive oil
To roast hazelnuts, place the nuts on a baking sheet, taking care to make only one layer. Roast for ~ 10 minutes or until fragrant. Remove from the oven and transfer the hazelnuts to a paper sack. Seal and allow to steam in the sack for 15 minutes. Transfer the hazelnuts to a towel and rub gently to remove the skins.
Preheat oven to 350°F and line a baking sheet with parchment paper.
Whisk together the flour, baking powder and salt in a mixing bowl. Stir in the vanilla, oil, rice syrup and orange zest. Slowly add the soy milk stirring to create a soft, spoonable dough. Fold in the chocolate chips and hazelnuts. Use an ice cream scoop to drop the dough onto the lined baking sheet, spacing 2 inches apart. Press the dough to flatten slightly. Bake for about 22 minutes, until just firm to the touch and beginning to brown. Do not overcook or the cookies will harden as they cool. Transfer the cookies to a wire cooling rack to cool completely. "Guten Appetit!"

Why Didn’t We Think Of That?
Some of you reminded us that it’s sometimes easy to make a little change that yields big results. In response we are switching to tamari (wheat-free) soy sauce, which will make a number of our meals work for folks with gluten allergies.
Remember, you can always call (303–440–3828) or email us if you have other dietary needs or you want to inquire about making substitutions.
Do you have a tip for us? Something you’d like to see, or something we could do better? Send it to us via email (or use the contact form on our website). Please don’t forget to tell us your name.
Last Words
If there’s something you don’t like about our food, or something you think we can do better, please tell us, we want to know and we can only fix it if we know it’s broken.
If you like our service, please tell your friends and neighbors (perhaps you could forward this newsletter). Thank you.
