Chef of the Month – Neal Foley
Local guest/celebrity chefs frequently contribute one recipe per month to The Organic Dish menu. Our Chef of the Month for October is Neal Foley from Kitchen Garden Network http://kitchengardens.net. Check out his meal this month- Beef & Stout Stew with Caramelized Onion Champ. ALSO – check out his VERY INFORMATIVE slideshows (and workshops) called “PORKSHOP” and “POULTRY PROCESSING WORKSHOP” – this is a really cool must see slide show if you have ever wondered how a pig or chicken goes from being raised to being butchered.

Chef Neal Foley, Kitchen Garden Networks founder – a chef, farmer and sustainability advocate – leads the organization’s educational and advocacy programs. Neal also presents the weekly podcast from the organization’s headquarters in western Washington State. Says Neal, “We might not think it’s important to know where our food comes from, but in that assumption, we would be very wrong. Never before has it been more important to know exactly where our food comes from, how it is produced and who handles it along the way.”
