Pomegranate margaritas for the holidays!
I love margaritas and there are a plethora of pomegranates hitting the market right now. This is a great holiday drink (especially if you’re family is anything like mine, ahem….)
To seed the pomegranate – cut it in quarters and hold it under water in a bowl Wear an apron (pomegranate juice stains easy) when getting the seeds to separate from the pith. The pith will float to the top and the seeds will fall to the bottom of the water bowl.
Mix together:
1 1/2 ounces tequila
1/2 ounce triple sec or Grand Marnier (if you are lucky)
2 teaspoons fresh Lime Juice
3 ounces pomegranate juice (substitute some orange juice frozen concentrate if it’s not sweet enough). You can buy pomegranate juice or push the arils (seeds) through a sieve to get the juice.
Serve it over the rocks or blend it and don’t forget to rim the glass with sea salt and add a couple of the tasty pomegranate seeds!
