STILL ON A PIZZA KICK! Dessert Pizza!
You might recall that we are on a huge pizza “binge”. Can’t get enough of it! We were invited to a neighborhood “pie party” last weekend. It’s hard to know what to bring, when you don’t eat much sugar and don’t like pie or sweets so much.
We decided to bring dessert pizza and it was awesome. We previously gave the recipe for our pie crust. So, here’s the dessert toppings for the same crust:
- 1/4 of a pineapple, peeled, cored, and thinly sliced
- 1 banana thinly sliced
- 1 teaspoon brown sugar
- 3 Tbsp Rum
- raspberry jam to lightly cover
- 1/4 of a chopped up (slivered thinly) dark chocolate bar
- 1/4 cup sliced toasted almonds
- 2 Tbsp unsalted butter
Preheat the oven and pizza stone to 450F.
Bring a pan to medium heat and melt 1 1/2 Tbsp butter. Add the brown sugar and rum and cook for ~ 3 minutes uncovered. Add the sliced pineapple, sliced banana and sliced almonds. Cook for an additional 3-5 minutes uncovered.
Pre-cook your pizza dough with nothing on it for ~10 minutes. Take the pizza (and stone out) and spread a light layer of raspberry jam. Add the fruit topping evenly. Top with slivered chocolate and bake for an additional 5-7 minutes or until chocolate is melted.
After you take it out, brush the edges with melted butter. Let cool for ~5 minutes and cut into little slices. Guten appetit!
