Sea Scallops are marinated in thyme, olive oil and citrus juices (lime and orange), and then pan fried with orange slices and served with green beans with sliced almonds and wild rice.

Pan fry the scallops while you cook the green beans and re-heat the wild rice. An absolutely delicious dinner will be ready in no more than 15 minutes… (this is one of the recipes Toby cooks for Beckie on special occasions)
