Chef of the Month

Each month a local guest/celebrity chef contributes one recipe to our menu. Our Chef of the Month for July is Elana Amsterdam, the creator of Elana’s Pantry, where she shares weekly recipes and ingredient selection, purchasing, preparation and meal-planning tips with her readers. Her recipe this month (Roasted Salmon with Anchovy-Olive Tapenade) is amazing!

Tofu Coconut Green Curry

This wonderful Thai curry dish with tofu bursts with flavor. The tofu is marinated and cooked in a rich coconut-green curry sauce with cilantro, tomatoes, kaffir lime leaves and served with brown Basmati rice.

Tempeh marinated with a Jamaican-style fragrant spice rub of paprika, thyme, all spice, and lime juice. Served with oven baked plantain slices with light coat of extra virgin olive oil and a pinch of sea salt, and a refreshing mango-tomato salsa sweetened with a touch of agave.

Please note: If we cannot find ripe organic mangos, we will use conventional ones. According to the environmental working group, out of maximum pesticide load of 100, mangos have one of the lowest (9/100).
