A Cuban classic that literally translates to "old clothes" - Colorado grass-finished flank steak slowly simmered with tomatoes, bell peppers, onions and green olives until the steak falls apart like...old clothes (what else!). Pescado a la Veracruzana

Perhaps Mexico's best known fish dish - a wonderful blend of flaky fish (we're using Icelandic cod, and we'll use the best fish we can find as we continue), pre-marinated in lime juice and then simmered in crushed tomatoes, seasoned with chunked green olives, capers, onions and garlic.
