Minestrone is a rich, sustaining soup that has lots of veggies. Our recipe uses cannellini beans as a starting point, and we finish it off with celery, carrots, and spinach. Served with a dollop of home-made basil pesto and orzo. Yum!

This is another wonderful traditional Italian recipe. A mix of button and portebello mushrooms from Hazel Dell in Ft. Collins, are simmered in tomato sauce, red wine, and basil and served over a bed of spaghetti and topped with Parmesan cheese.

This is a wonderful traditional Italian recipe. Succulent boneless skinless organic chicken thighs are slow cooked in tomato sauce, red wine, mushrooms from Hazel Dell in Ft. Collins, and basil and served over a bed of spaghetti and topped with Parmesan cheese.
