Perfect as the days get longer and cooler! Chioggia beets are sweeter and prettier than any other beet, and our version is smooth, simple and delicious. Beets slow cooked with cabbage, onions, carrots, potatoes, and a hint of dill then pureed into a thick soup. Sour cream served on the side for you to dollop on the top or mix in. A tasty tomatillo green chile stew with Hatch mild green chiles, corn, beans, cilantro, and a variety of spices. Served with tortilla chips and cheddar cheese.
