Chef of the Month

Each month a local guest/celebrity chef contributes one recipe to our menu. Our Chef of the Month for February is Kimberly Mayone who is a recipe developer and freelance food writer who lives in Maine. She is the co-author of The Everyday Low Carb Slow Cooker Cookbook.

Kimberly is also a regular contributor to Hannaford fresh Magazine and in addition her recipes have been featured in Health magazine. Kimberly is one of the editors at Flavorista, a food blog all about proven recipes, grocery finds and delicious eateries. Be sure to check out her Middle Eastern Chicken Stew on this months menu!

Cannellini Minestrone

Minestrone is a rich, sustaining soup that has lots of veggies. Our recipe uses cannellini beans as a starting point, and we finish it off with celery, carrots, and spinach. Served with a dollop of home-made basil pesto and orzo. Yum!

This soup just needs to be heated up after it has been defrosted – whether you enjoy it for lunch or for dinner, it will be ready in no more than 15 minutes. 1 pot.

Citrus Tofu Tagine With Couscous

Ginger, cumin, coriander and cardamom are just some of the spices that combine with orange slices and golden raisins to enhance the flavor of this tofu tagine, a dish that has its roots in North Africa. Served with couscous and toasted almonds.

A tagine is typically cooked in a heavy clay pot of the same name, but we’ve created this one to work in a stock pot – just stirfry all the ingredients on the stove top for about 10 minutes. 2 pots.

This is a vegetarian version of a delicious recipe passed along by our customer Audrey. A tasty tomatillo green chili stew with corn, beans, cilantro, and a variety of spices. Served with tortilla chips &ndash crumble them over the top or use them for dipping.

Mushroom Cacciatore

This is another wonderful traditional Italian recipe. A mix of button and portebello mushrooms from Hazel Dell in Ft. Collins, are simmered in tomato sauce, red wine, and basil and served over a bed of spaghetti and topped with Parmesan cheese.

Diced sweet potatos and broccoli simmered in a mild Vadouvan Curry (blended by the Savory Spice Shop in Boulder) and coconut sauce. Served over udon noodles and topped with roasted peanuts. Sriracha sauce served on the side so you can heat it up if you like.

Cook the sauce in a pan and boil some water for the noodles. Dinner is ready two pots and 20 minutes later. Gluten free will be made with rice or buckwheat noodles - please specify.

Chicken Cacciatore

This is a wonderful traditional Italian recipe. Succulent boneless skinless organic chicken thighs are slow cooked in tomato sauce, red wine, mushrooms from Hazel Dell in Ft. Collins, and basil and served over a bed of spaghetti and topped with Parmesan cheese.
