Going Local

In order to offer the freshest, best tasting and most humanely raised meat, we are sourcing our beef and pork from small, local, hormone and antibiotic free (but not certified organic) producers. Read more about where our food comes from …

Chef of the Month

Each month a local guest/celebrity chef contributes one recipe to our menu. Our Chef of the Month for August is Antonio Laudisio from Laudisio in Boulder and his recipe is the delicious Boulder Polenta.

Antonio’s grandfather cooked on the ocean liners coming from Italy in the early 1900’s. He moved his family to New York and opened the first family bakery in Brooklyn. Out of this, the family pizzeria/restaurant tradition emerged, first in Florida and then in Colorado. The first Laudisio opened on the corner of 28th and Iris twenty years ago and then moved to the 29th Street Shopping District in 2006. Antonio says "Through our Italian culture, we respond to the community awareness of real food. We change our menu seasonally to best utilize and reflect the beauty of the Boulder County gardens, waters and farms. We invite you to experience the joy of the Italian table. Boulder Polenta - Chef of the Month

You are truely missing out if you’ve never had the Boulder Polenta from Laudisio’s! This is our version of this famous dish – baked Polenta filled with spinach and ricotta and asiago cheese and a flavorful Puttanesca sauce. Did we mention that this is one of our favorite dishes ever?

Peach Tomato Tofu

This recipe derives its flavor from the delicious Palisade peach from Morton's Orchards and a tomato barbeque sherry sauce and marinade (sweetened with a hint of agave nectar). Served with brown Basmati rice and green beans. Yum!

The tofu is pre-baked so it just need to be warmed up, but it will gain additional flavor from being seared in a pan (or grilled as kabobs on the barbecue). 3 pans.

Tempeh marinated with a Jamaican-style fragrant spice rub of paprika, thyme, all spice, and lime juice. Served with oven baked plantain slices with light coat of extra virgin olive oil and a pinch of sea salt, and a refreshing mango-tomato salsa sweetened with a touch of agave.

Please note: If we cannot find ripe organic mangos, we will use conventional ones. According to the environmental working group, out of maximum pesticide load of 100, mangos have one of the lowest (9/100).

Crockpot Chicken Tarragon

We usually try to stay away from creamy and buttery dishes, but this recipe "called" to us! Tender chicken thighs and Hazel Dell button mushrooms are marinated in a touch of butter, cream, white wine, and broth and spiced with tarragon. Served with wild blend rice and agave and orange glazed carrots.

Put everything in a crock-pot in the morning or simmer in a stock pot on the stove top for about 40 minutes. 2 pans.
