The chicken can be baked in the oven or cooked stovetop, reheat the rice and cook the corn stovetop; either way, dinner will be ready in less than 25 minutes… Cool down that ancho chili with a racy, fragrant, grapefruity Airén from Sol De Agosto, a new Spanish wine in town. Its nose of stony minerals will complement the scent of almonds while its creamy texture complements the subtle cumin and lime juice this chicken dish offers. A Spanish red fits well with this dish, like the smoky, spicy, vanilla bean mouth of a Rioja Tempranillo by Almagre. Pleasant aromas of raspberry and strawberry will surely delight any nose as it inhales the warm steaming cilantro and ancho chili from the plate.
