Chef of the Month

Local guest/celebrity chefs frequently contribute one recipe to our menu. Our Chef of the Month for July is Elana Amsterdam, the creator of Elana’s Pantry, where she shares weekly recipes and ingredient selection, purchasing, preparation and meal-planning tips with her readers.

She has written for publications including The Denver Post, The Boulder Daily Camera, Delicious Living, Delight Magazine, and Elephant and has been featured in a variety of publications including 5280, Working Woman, Crain’s New York Business, Fortune Magazine and The Wall Street Journal, and has appeared on CNN and MSNBC.

Her book, The Gluten-Free Almond Flour Cookbook, will be published by 10 Speed Press in July 2009.

Peach Tomato Tofu

This recipe derives its flavor from the delicious Palisade peach (when available) and tomato barbeque sherry sauce and marinade (sweetened with a hint of agave nectar). Served with brown Basmati rice and spinach. Yum!

The tofu is pre-baked so it just need to be warmed up, but it will gain additional flavor from being seared in a pan (or grilled as kabobs on the barbecue).

This is an adaptation of recipes from Beckie’s mom and from our friend Kevin. Baked green chilis stuffed with ripe mangos and (unpasteurized) Monterrey-Jack cheese, served with Caribbean beans and rice and our homemade mango-guacamole salsa.

Please note: If we cannot find ripe organic mangos, we will use conventional ones. According to the environmental working group, out of maximum pesticide load of 100, mangos have one of the lowest (9/100).

One of our customers’ favorite pizza – and where else can you get a mostly organic pizza in Boulder? This pizza is made with our own walnut-spinach pesto, combined with kalamata olives, artichoke hearts, and feta cheese from Longmont’s Haystack Mountain Goat Dairy.

This is the vegetarian version of our Herb Chicken. Mushrooms from Hazel Dell in Ft. Colllins, herbs, a little butter, sweet peas, egg noodles (potatoes if requested gluten free) and a dash of Organic Vinters’™ Pircas Negras Torrontés wine, and tofu make for a nice combination of home-cooked flavors.

While it can be prepared in a crock-pot, the tofu does best when this dish is prepared in a stock pot on the stove top.

Barbecue ribs in a crock-pot? You bet! Delicious, juicy beef ribs are marinated in our sweet and tangy barbecue sauce (paprika, thyme, tamari, tomato paste and honey). Served with pinto beans and spinach.

Note: The ribs are HUGE this time - nearly 3 pounds! If you are using a crockpot you will need one with a 6 quart capacity; otherwise bake them in the oven.

A full pound of peak season wild caught salmon, marinated in fresh lemon juice and kalamato olive, rosemary, and anchovy tapenade. Served with super nutritious (local when available) kale and butternut squash lightly seasoned with cinnamon, olive oil and agave.
