This is the vegetarian version of our Chicken Cashew Stir fry, and just like it’s non-vegetarian sibling, this recipe has a distinctly Asian flavor. Tofu, red peppers, water chestnut and green onions are marinated in black bean paste and chili-garlic sauce and topped with roasted cashews. This meal is gluten free except for the Black Bean Chili Paste which can not be made gluten free.
