Gazpacho is a cold tomato based raw vegetable soup originating in Spain. This is a super refreshing soup loaded with fresh pureed roma tomatoes, cucumbers, bell peppers, parsley and rounded out with a touch of extra virgin olive oil and white wine vinegar.
