Gazpacho is a cold tomato based raw vegetable soup originating in Spain. This is a super refreshing soup loaded with fresh pureed roma tomatoes, cucumbers, bell peppers, parsley and rounded out with a touch of extra virgin olive oil and white wine vinegar. Served with croutons baked in olive oil, sea salt and black pepper.

This is our most popular dish and stays on the menu year-round! Red lentils are cooked in coconut milk, spinach, veggie broth and a variety of spices, and served over brown Basmati rice. Simple and delicious!

A tasty summer treat contributed by Kami, one of our kitchen assistants. Wonderfully tender and moist pork tenderloin from Long Family Farms right here in Colorado lightly marinated in red wine, olive oil and oregano, and served with Tszatziki sauce, cool tabouli, and broccoli.
Barbecue or pan fry the pork and serve with chilled Tszatziki sauce and Tabouli (at room temperature). A great recipe for those who love to barbecue without having to worry about preparing side dishes! 3 pans.
