Local guest/celebrity chefs frequently contribute one recipe to our menu. Our Chef of the Month for June is Chef Barr Hogan (www.barr-none.net), who also co-authors the wonderful blog www.flavorista.com.
After cooking with many renowned Bay Area chefs, she opened one of San Francisco’s first whole foods restaurants, Val 21. Unbeknownst to her, the juice bar at Val 21 would be her first introduction to the nutritional value of juicing, which turned into a nine-year career as Creative Chef at Odwalla, Inc.. Barr also worked as a chef at San Francisco’s Project Open Hand, preparing meals with love for people with AIDS. Chef Barr is now a consultant to the Natural Foods industry and helps her clients with product development, ingredient recommendations, reformulations and branding.

Our kitchen assistant Kami had the idea for this recipe. Homemade yummy chickpea patties (think healthy falafel) served with a tzatziki sauce, a cool, minty tabouli, and broccoli.

A tasty summer treat contributed by Kami, one of our kitchen assistants. Wonderfully tender and moist pork tenderloin from Long Family Farms right here in Colorado lightly marinated in red wine, olive oil and oregano, and served with Tszatziki sauce, cool tabouli, and broccoli.
Barbecue or pan fry the pork and serve with chilled Tszatziki sauce and Tabouli (at room temperature). A great recipe for those who love to barbecue without having to worry about preparing side dishes! 3 pans.
