Ingredients
Each dinner starts with the freshest natural and organic ingredients. If one of our organic dinners contains non-organic ingredients (other than beef, pork or seafood), they will be clearly indicated in orange on our monthly menu. We use the highest quality ingredients, and whenever possible we buy from local Colorado farmers and ranchers.
The main reasons for buying local are to ensure maximum quality and freshness, support the local economy, and minimize transportation and the resulting greenhouse gases. You can learn more about why we try to buy from local producers (and who they are) in the "Local Producers" section.
Our poultry comes from Rosie Organic Chicken from Petaluma in California. Our beef and pork is all natural, not organic. That means the animals are raised without antibiotics, growth promotents, preservatives and hormones and they are never fed animal byproducts. In addition, our beef is grass fed for maximum flavor. We buy our beef from Boulder Natural Meats and our pork from Long Family Farms in Eaton, Colorado.
We only use wild caught fish in our organic dinners. We also ensure that the fish we feature is low in mercury and P.C.B. and sustainably harvested. While this adds some cost to our fish dishes, it’s healthy for you and the ocean (more information is available in our FAQ section). However, we use farm raised shellfish from time to time, because fresh, high quality wild caught shrimp are not always available in Colorado.
Lastly, we avoid unnecessary refined sugars and processed foods in all of our meals.
Vegetarian meals (and special diets)
We feature 4–7 vegetarian meals each month (in addition to our selection of organic meals with beef, pork, poultry and seafood). We strive for a mix of vegetarian meals with a soy protein (tofu, tempeh) and without.
With advance notice we are able to accommodate a variety of special dietary needs, and substitutions are always free.
We can eliminate gluten and/or dairy products from almost all of our meals (but please note that the meals are made in the same kitchen where we also work with nuts, wheat, soy and dairy). If desired, we can substitute rice pasta or buckwheat pasta for regular (wheat) pasta, and rice or quinoa for couscous. We only use tamari (gluten free) soy sauce, and 3 grain gluten free tempeh. Only a few of our organic meals contain dairy products (we usually prefer olive oil and soy-based products), and the ones that do can often be made without to accommodate a vegan diet.
Our grains/starches (pasta, couscous, quinoa, rice, potatoes, bread) are interchangeable, so if you prefer one over the other, just let us know. All of our rice is whole grain, and we have whole grain pasta, couscous, and bread available on request.
Don’t like peppers or cardamom or worcestershire sauce? No problem. Just let us know when you order and we’ll leave ’em out.

Our organic dinners look, smell and taste great when they reach your table because long before you enjoy them, they go through a rigorous testing process to make sure they meet our standards.
Inspirations for the meals come from a variety of sources; mouth-watering photos from food magazines, old family favorites or suggestions from customers. We then experiment with seasonings and ingredients, and finally run each meal through the complete preparation, freezing, thawing, and cooking process and get feedback from our "taste testers" before it appears on our monthly menu.
